Sunday, March 25th 

Join us at the Galloway School in Buckhead for the 12th annual Merrick’s Walk. The event is a 2.7-mile walk around Chastain Park in memory of Merrick Ryan, a 19-year old Galloway alum who passed away from anorexia in January 2000.  All ages and fitness levels are welcome.

All proceeds benefit EDIN, the ONLY non-profit organization in Georgia committed to the prevention of all types of disordered eating and the promotion of positive body esteem through education, outreach, and action. EDIN exists to provide all those in need, regardless of gender, race, socioeconomic status and/or age with free educational resources regarding eating disorders, their contributors, effects and available treatment options. Our Community and School outreach programs reach thousands of Georgia’s students, educators, parents, and eating disorder sufferers.

Healthy Snacking   

 

Roasted Beet Hummus

 

½ pound beets, scrubbed clean

2 tablespoons tahini paste

¼ cup lemon juice

1 clove garlic

1 teaspoon ground cumin

¼ teaspoon cayenne pepper

Kosher salt to taste

Extra-virgin olive oil

 

1.) To roast the beets: wrap each beet individually in aluminum foil, place in a baking dish, and roast at 350 degrees for 45 minutes. Wearing rubber gloves, peel the beets and cut into chunks.

 

2.) Place all ingredients in a food processor and pulse until smooth, adding olive oil-one tablespoon at a time-until the desired consistency is reached.

 

3.) Serve chilled.
